Roasted Corn Salad with Blistered Cherry Tomatoes

Here's an amazing roasted corn salad recipe that’s perfect for your 4th of July celebration. This dish combines the sweetness of roasted corn with a hint of spice and fresh herbs, making it a vibrant and flavorful addition to any summer gathering
Ingredients
4 ears fresh corn, husked
2 tablespoons extra virgin olive oil
1 pint cherry tomatoes
3 cloves garlic, thinly sliced
4 green onions, thinly sliced
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
2 tablespoons white wine vinegar
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup crumbled feta cheese (optional)
Instructions
Roast the Corn: Preheat your oven to 400°F (200°C). Place the husked corn directly on the oven rack and roast for 15 minutes. Turn the corn and roast for another 15 minutes until it's lightly browned. Once cool, use a sharp knife to slice the kernels off the cobs.
Blister the Cherry Tomatoes: Heat a heavy skillet over medium-high heat. Add 2 tablespoons of olive oil, and when it’s hot, add the cherry tomatoes. Cook them undisturbed for about 2 minutes until they start to split and char. Stir, then add the sliced garlic and cook for another 30 seconds.
Assemble the Salad: In a large bowl, combine the roasted corn kernels, blistered tomatoes, green onions, basil, and parsley. Add the white wine vinegar, salt, and black pepper. Gently toss everything together. If desired, sprinkle with crumbled feta cheese.
Serve and Enjoy: Transfer the salad to a serving bowl and enjoy it as a side dish at your barbecue or picnic.
